Bringing back a good ol fashioned Sandwich!

When it comes to an easy lunch, I’m all for it. But that doesn’t mean you have to sacrifice deliciousness. This recipe fills me with nostalgia from the years of eating toasted chicken or tuna mayo Sandwich from my primary school tuck-shop.

I use this ‘cheeky’ mayo filling on sandwiches, bagels, salads, wraps or on crackers. Quite honestly it’s just so damn delicious I often eat it straight out the bowl haha!

I hope you enjoy it as much as I do.

What you will need: Cheeky Mayo filling: (serves 2)

  • x1 can garbanzo beans drained and rinsed (if you are sensitive to garbanzos you can also use cannelloni or butter beans)

  • 1/4 small red onion finely chopped

  • 1/2 lemon

  • x2-3 tbsp vegan mayo of choice (I use the regular Vegan mayo from Woolworths)

  • Salt & pepper to taste

  • Pinch of dried oregano

  • x1 tsp sesame seeds

  • *Optional pinch of chilli flakes

Method:

  • Place all ingredients int a bowl and mix together to make sure the garbanzos are coated.

  • Using the back of a fork, start crunching the chickpeas until they are 50% crunched (or to your desire consistency)
